Mommy’s Break

Ya’ll know I love my baby, but sometimes I need a break. There is nothing wrong with wanting and/or having a break from our kids, husbands, or work and just having some fun with our girls.

This weekend I invited my girlfriends over to have a girl’s day, which included a visit from Pure Romance. For those that do not know, Pure Romance has been around for 25 years and they consider themselves a safe haven for women. They offer a variety of toys meant for your pleasure (if you know what I mean.) Pure Romance is not just about sex toys; they also offer lingerie and education. The founder of Pure Romance, Patty Brisben also founded the Patty Brisben Foundation.

The Patty Brisben Foundation is a nonprofit organization that helps women who experience painful intercourse. They also focus on the woman's sex life after chemo and radiation. All of the toys made by Pure Romance helps to make intercourse more helpful and pleasurable.

Therefore, your money is going to a good cause.

Now for the fun stuff!

You know I couldn’t have my girls over without providing some good eats! The menu for the day was Mac N Cheese Balls, Fried Chicken, and Sweet and Sour Kielbasa. Of course, we had some wine to wash it all down. These are my 'go to' recipes when it comes to having large gatherings. These recipes are easy to make and they don’t break the bank!

Sweet and Sour Kielbasa

Ingredients:

1 cup Apricot Preserves

½ cup Dijon Mustard

1 pack of Turkey Kielbasa

Directions:

Cut Kielbasa at an angle and about a half inch thick. Put the Kielbasa, Apricot Preserves and Dijon mustard in the crock-pot. Turn the crock-pot on high and let it go for 4-5 hours.

Notes: I do not eat pork, which is why I used Turkey Kielbasa. However, this recipe goes with any Kielbasa of your choice. Additionally, if you do not have a crockpot, put the stove on medium low. Let it come to a boil and turn down to simmer for about 45minutes to an hour.


Mac N Cheese Balls

Ingredients:

2 – 16ox boxes of elbow pasta

2 ½ cups of whole milk

1 stick of butter

¼ cup flour

4 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

7 eggs

2 teaspoon ground mustard

½ teaspoon hot sauce

Vegetable Oil

1 container of panko bread crumbs

Optional:

Marinara sauce for dipping

Directions:

Begin by boiling water and cooking your elbow pasta per the box instructions. In a small bowl, crack and beat 1 egg and set it to the side. Then crack and beat the remaining eggs in another bowl and place to the side. Be sure not to over cook the pasta, you want it to still have a little bite to it. While the pasta is cooking, let's start our cheese sauce.

*once the pasta is done cooking, drain and put to the side*

To begin, set your stove on medium-low heat before you add your stick of butter. Once the butter has melted, take the flour and add it in small amounts, while constantly whisking. Let that mixture cook for about a minute, then slowly pour in your milk. Again, constantly whisking the mixture to ensure it does not lump up or burn.

Let this cook for about 3 minutes. You will see the mixture get thick. At this point add the dry mustard and hot sauce. Also, add a small pinch of salt and pepper. Turn your heat to low at this point.

Now, with the egg that we put to the side, you are going to take a spoonful of the mixture and add it to the egg constantly whisking to ensure the egg does not cook. Take that mixture and add it to your pot while whisking.

At this point add all of your cheese to the mixture and once it is melted, you can add your cooked pasta.

Put the Mac N Cheese in a pan and place it in the fridge. You need your Mac N Cheese cold in order to form it into balls. So, let the Mac N Cheese chill for about 2 hours or overnight if you can.

Now take some vegetable oil and put it in a deep pot for frying. Put the heat on medium. While the oil is heating up, you can form the mac n cheese into balls. Simply take a spoonful of mac and form it into a ball with your hands.

We can now get our assembly line going. Get 3 bowls. Once for flour, your already beat eggs that we put to the side, and the breadcrumbs. First, roll the balls in the flour, then coat in the egg and then dip in the breadcrumbs.

Once the balls are coated in the bread crumbs add to the oil and cook until golden brown.

**Pro Tip**

Grate your own cheese!!! Please don’t get pre shredded cheese, it does not melt as good as if you grated your own**


Fried Chicken

Ingredients:

1 bag of chicken

2 cups of flour

1 cup cornstarch


Directions:

Now I know ya’ll have all fried chicken at least one or twice in your lives lol. Therefore, you will just season the chicken to your liking. Take the flour, cornstarch, and mix in a deep bowl or zip lock bag. Add salt and pepper to your flour mixture. Take the chicken and get it coated in your flour mixture fry in some vegetable oil at medium-medium high heat.


**Pro Tip**

Take your chicken up a notch and make a quick and easy dipping sauce. ½ cup of Ranch Dressing and 1/3 cup of Buffalo sauce.


Now that all the food is done, plate it up, make it look cute, and get your kid and spouse free fun day on!!!
